Without a doubt, Shirley gave the better performance. She's iconic in the role.

They were both good but Debra's part was more easily replaceable with another actress, Shirley really made that part her own.

Two different approaches to acting.
Shirley MacLaine is an old school pro. She's always in control and it's fascinating watching her use her skills throughout the film.
Debra Winger, on the other hand, plays this role with incredible rawness. I bet no two takes were the same. (Unlike Shirley, who I imagine does not like to improvise.)

Does Shirley have a history of this or was Debra the aggressor? She seems to have conflicts with a great many costars?

I am sure neither one is a walk in the park. Or fun to have over to dinner. Shirley would put on a show for the table (as in Postcards from the Edge) and Debra would sit sullen and miserable in her chair. I don't think either personality is better than the other.

Wasn't Shirley the main protector of Julia Roberts on Steal Magnolias and had it out with Herbert Ross numerous times for his horrible abuse?

Shirley gave the better - and Oscar winning performance - and even allowed herself in some scenes to be filmed in harsh lighting which showed all the wrinkles on her aging face. That was an act of bravery and professionalism which most actresses would say NO to. By the way I remember more of Shirley's scenes in this movie as opposed to Debra. Shirley really DID deserve the Oscar for her standout performance.
