LIke R1, we learned as kids, but it was a line dance, not partner dancing. Came in handy in the early 90's when Detroit and Chicago Hustle came back. Also a friend took me to Oil Can Harry's (Gay country music club), and everyone was surprised how quickly I picked up line dancing.

Did we go to school together, R1? On rainy days they’d keep us inside for PE and teach us dances. They told us they were teaching us The Hustle but it didn’t look like what the people in the video are doing. More of a line dance version, like r4 mentions.

Everyone in the video is doing different dances to the same song. Seems like whatever you did was doing the Hustle.
I looked up videos about the hustle a couple years ago. I thought it was a line dance like that scene in Saturday Night Fever but there were twirly partner dances, free styling, and people doing the stuff you see in the repetitive clips in this video.
In conclusion, the hustle is whatever you want it to be.
